Akvavitsill
Det här
behövs:
8 urvattnade sillfiléer
Lag:
3 dl vatten
1 dl ättikssprit 12%
2 dl strösocker
1 tsk salt
½ tsk kummin
1 tsk dillfrö
Till inläggning:
50 gr skivad röd lök
50 gr skivade morötter
100 gr skivad fänkål
½ dl finskuren dill
20 gr tärnad pepparrot
6 cl akvavit
Gör så här:
- Koka upp alla ingredienserna till lagen och rör om tills sockret är
löst. Låt lagen kallna och sila den sedan
2. Varva
sillfiléerna med lök, morötter, fänkål, dill och pepparrot i en kruka och slå
på lagen samt akvaviten. Ställ kallt i minst 1 dygn.

3 kg hel sill
Rensa sillen, ta bort fenor lägg den i en lag av ättika (4 grader)
och 1 l vatten över natten. Ta upp sillen och låt den rinna av
på papper.
Varva den med
3 kkp socker
1/2 kkp salt
1/2 kkp kryddpeppar och vitpeppar (krossad)
Färdig efter 14 dagar.
Låt stå kallt!

Ingredienser:
1 burk (420 gr) urvattnade sillfiléer skuren i bitar
2 rödlökar i tunna skivor
0,5 dl hackad dill
Lag:
2,5 dl vatten
1 dl ättiksprit (12%)
1 1/2 dl socker
5 grovt krossade kryddpepparkorn
2st lagerblad
5 kryddnejlikor
1. Skölj sillfiléerna och låt dem rinna av. Lägg dem i en glasburk med lock
tillsammans med löken och dillen.
2. Blanda samman ingredienserna till lagen och koka upp. Låt lagen kallna och
häll den över sillen. Låt sedan sillen stå ett dygn innan ni serverar

1 burk matjesill 200 gr
1 dl passerade tomater på burk
1 1/2 tsk salvia
1 kryddmått svartpeppar
Så här gör man
1. Häll upp matjesillarna och skär dem i sneda portionsbitar. Spara lagen
2. Blanda lagen med 1 dl passerade tomater, finstött salvia och nymalen
svartpeppar.
3. Blanda matjesill och lag och låt stå svalt i några timmar

Citron- och Limesill
Denna sill skall ligga i vanlig inläggningslag ett dygn innan den läggs i
citron-och limelagen.
Det här behövs:
6 urvattnade salta sill filéer
Lag 1:
1 1/2 dl vatten
5 msk ättikssprit 12%
1 dl strösocker
10 kryddpepparkorn
1 lagerblad
1 liten gul lök
några dillstjälkar
Lag 2:
1 dl majonäs
3 dl gräddfil
rivet skal av en lime
rivet skal av 1/2 citron
1 msk pressad lime
1 msk pressad citron
Gör så här:
1. Koka upp vatten, ättika, socker, pepparkorn och lagerblad. Låt kallna
när sockret har löst sig. Lägg de urvattnade sillfiléerna i en skål. Häll över
den kalla lagen. Lägg i skivad lök och skurna dillstjälkar. Låt stå kallt ett
dygn.
2. Blanda alla ingredienser till Lag 2-
3. Tag upp sillfiléerna ur lagen, skär dem i bitar och blanda ner i
lag 2.

Till detta recept behövs inlagd sill- För en vanlig inläggningssill kan du
följa receptet på lag 1 för citron-och limesill.
Ingredienser
Sås:
6 msk svensk senap
5 msk strösocker
1 tsk salt
1 msk ättikssprit 12%
1/2 dl vatten
1/2 dl vispgrädde
1 1/2 dl matolja
2 msk finhackad dill
Gör så här:
Blanda senap, socker, salt och ättika. Tillsätt vatten, grädde och olja
under vispning, lite i taget tills såsen tjocknar. Blanda ner dill. Varva sås
och avrunnen sill i en kruka. Låt stå minst ett dygn innan servering.

Gör så här:
Häll bort lagen och spola sillfiléerna i kallt vatten. Låt dem rinna av och

Skölj och dela äpplet. ta bort kärnhuset. Finhacka äpplet.

1 dm purjolök
1 rödlök
Till lagen:
1/2 dl ättikssprit 12%
1 1/2 dl vatten
1 1/2 dl socker
1 lagerblad
5 kryddnejlikor
2 tsk lätt krossad koriander
Så här gör man:
1. Spola av filéerna i kallt vatten. Låt dem rinna av
2. Koka upp vatten, ättika och kryddor till en lag. Låt den kallna
3. Skär purjo och rödlök i tunna skivor. Skär filéerna i tunna munsbitar.
Varva sill och lök i en burk. Slå på lagen. Låt stå över natten.

Marinad:

Skär sillen i sneda bitar. Blanda samman alla ingredienserna till
marinaden, smaka av ochhäll den över sillen. Slå över hackad lök och dill och
låt den stå och dra några timmar.

1 burk inläggningssill (à 420 g)
ca 20 svarta vinbär
1/2 dl outspädd svartvinbärssaft
1/2 rödlök
2 kryddpepparkorn
Lag
1 1/2 msk ättiksprit (12%)
1 1/3 dl strösocker
1 1/2 dl vatten
1 lagerblad
Så här gör du
1. Koka upp samtliga ingredienser
till lagen så att sockret löser sig. Låt svalna.
2. Skiva sillen i portionsbitar.
Lägg den i en glasburk med lock. Varva med svarta vinbär och skivad lök
3. Blanda lagen med saften. Fyll
upp glasburken så att sillen täcks. Ställ kallt, helst 2 dygn.

En sill som bara blir godare
om du låter den dra i lagen i minst två dygn.
Receptet är för 4 portioner men passar även för 10 bufféportioner.

500 gr strömming
1 l vatten
1 ½ dl Ättikssprit 12%
3 msk salt
Ta bort skinnet från filéerna.
Blanda samman ingredienserna till lagen och lägg ner strömmingen. Låt stå kallt
över natten.
Sås:
5 msk svensk senap
4 msk socker
1 dl vatten
1 dl olja
3-4 vitlöksklyftor
1 bunt dill
Rör samman senap, socker och
salt. Tillsätt vatten i oljan, lite i sänder. Pressa i vitlöken och blanda ner
den finklippta dillen. Varva strömming och sås i en kruka och låt stå kallt
till nästa dag.

Låt filéerna ligga i vatten i
2 timmar. Ta upp och låt dem rinna av. Skär dem i sneda bitar. Skala rödlöken
och hacka den fint. Hacka även vitlöken fint. Koka lagen så att den blir
simmig. Låt kallna. Varva sill, dill och lök i en skål. Häll över lagen och
lägg ett lager finhackad lök överst. Garnera med dill. Färdig efter ett dygn
