Blanda alla ingredienserna och förvara i en burk med tätslutande

lock.

Kryddsmör Cajun

 

Cajunsmör

Ingredienser

125 g smör

½ tsk cayenne, malen

½ tsk svartpeppar, finmalen

½ tsk timjan, torkad

½ tsk basilika, torkad

½ tsk chiliflakes

2 st viklöksklyftor, krossade

½ tsk worchestershiresås

Blanda samtliga ingredienser ordentligt med smöret.

Låt gärna smöret bli kallt i kylen innan du använder det. Detta smör håller cirka tre veckor i kylen, under förutsättning att smöret är ordentligt färskt.

Cajun blackened fish rub

Ingredienser

5 tsk paprikapulver

1 tsk oregano, torkad

1 tsk timjan, torkad

1 tsk cayenne, malen

½ tsk svartpeppar, finmalen

½ tsk vitpeppar, finmalen

½ tsk vitlökspulver

 Instruktioner 

1.    Blanda ihop samtliga ingredienser i en skål.

2.    Förvara kryddblandningen i en lufttät burk och håll den borta från värme och ljus, så håller den sig minst 6 månader

Notering

Innan du grillar fisken skall du pensla den med olja och därefter rikligt strö över kryddblandningen, massera försiktigt in kryddorna så de inte lossnar på en gång.

100 g paprikapulver

140 g salt

40 g lökpulver

40 g vitlökspulver

35 g cayenne, malen

40 g svartpeppar, finmalen

2 g timjan, torkad

2 g oregano, torkad

36 g fänkålsfrön

2 tsk anis, malen

 Instruktioner

1.    Blanda ihop samtliga ingredienser i en skål.

2.    Förvara kryddblandningen i en lufttät burk och håll den borta från värme och ljus, så håller den sig minst 6 månader.

Notering

Innan du grillar köttet (med fördel en entrecôté) skall du pensla den med smällt smör och därefter rikligt strö över kryddblandningen, massera försiktigt in kryddorna så de inte lossnar på en gång.

Bayou Spicy Cajun Rub

En kryddblandning från Louisiana’s bakgårdar. Den har en rustik, men ändå förfinad smak av paprika och samtidigt kryddig av cayenne och senap. Denna rub passar utmärkt till grillad kyckling och kött, där du vill ha extra hetta, men även till jambalayas eller andra grytor.
