Klipp till et smörpapper i 30 cm i diameter. skiva potatisen i tunna skivor och lägg mitt på pappret. Lägg på sillfilé, örter, vårlök och peppar. Avsluta med lite smör. Vik ihop och ställ in i 225 grader i ca 15 minuter.

Dra skinnet av filéerna. Blanda vatten, ättika och salt i en burk.

Lägg i strömmingen och ställ kallt i kylen över natten. Häll

bort lagen och låt filéerna rinna av ordentligt i ett durkslag.

Ingredienser:

1 burk inläggningssill (420 g)

4 msk dill finhackad

1 rödlök skivad

1 lagerblad i bitar

1 morot i tunna skivor

rivet eller strimlat skal från en av citronerna (endast det gula)

Citronlag:

1,5 dl ättiksprit (12%)

1,5 dl strösocker

saften av 2 citroner

Skölj av sillen i kallt vatten och skär i 2 cm breda bitar.

Varva sill, dill, rödlök, morötter, citronskal och lagerblad i en

stor burk med lock.

Koka lagen tills sockret löst sig. Låt lagen kallna och häll den

över sillen. Ställ i kylskåp minst ett dygn innan servering.

1. Koka alla ingredienser till lagen i en rostfri kastrull tills sockret är löst.

Sillen:

1 burk (420 gr) urvattnade sillfiléer

2 rödlökar, i tunna skivor

0,5 dl hackad dill

Lag:

2,5 dl vatten

1 dl ättiksprit (12%)

1 1/2 dl socker

5 grovt krossade kryddpepparkorn

2 lagerblad

5 kryddnejlikor

Senapssås.

1 dl matolja

3 msk senap

2 msk socker

2 msk rödvinsvinäger

1 dl hackad dill

Vitpeppar

salt

1. Skölj sillfiléerna och låt dem rinna av. Lägg dem i en glasburk med lock tillsammans med löken och dillen.

2. Blanda samman ingredienserna till lagen och koka upp. Låt lagen kallna och häll den över sillen. Låt sedan sillen stå ett dygn.

Senapssås:

1. Blanda senap, socker och vinäger. Tillsätt oljan droppvis,under vispning(använd elvisp).

2. Blanda i dillen och smaka av med salt och peppar
Efter ett dygn när sillen är färdig marinerad, silas lagen bort.

Blanda sedan sillen med senapssåsen. Låt den stå ytterligare ett par timmar i såsen innan skär upp den och serverar.

1 stor gul lök

1 röd lök

15 cm purjolök

hel kryddpeppar

lag:

4 hg. socker (4,4 dl.)

2 dl. ättikssprit

4 dl. vatten

Skiva lökarna och krossa kryddpepparn. Varva sill, lök och kryddpeppar i en glasskål.

Blanda ingredienserna till lagen och rör tills sockret har löst sig.

Häll på lagen (se till att den täcker sillen ordentligt, annars får du göra mer lag) och låt sillen stå kallt i ett dygn. Dela sillen i mindre bitar  och servera.

Sillen håller sig i minst en vecka.

Lag:

1/2 dl ättikssprit

1 dl vatten

1/2 dl socker

1 stor gul lök

2 msk grovt krossad kryddpeppar

1 flaska chilisås

Lägg sillfiléerna i vatten 8-10 timmar. Blanda väl samman´ingredienserna utom löken till lagen. Skär sillen i 2cm tjocka bitar och varva ner dem och skivad lök i en glasburk. Slå över lagen.

Efter tre dygn är sillen färdig

Mormors ryska sill

6 filéer fet salt islandssill från tunna eller 2 burkar urvattnad

inläggningssill a 420 gr

strösocker

ca 300 gr inlagda rödbetor

ca 300 gr smörgåsgurka eller ättiksgurka

3-4 dl gräddfil

Gör så här:

1. Skär filéerna i en cm breda bitar. Lägg sillen i en burk och strö  lite socker mellan lagren (gäller islandssill). Skaka burken lätt och låt stå i kylskåpet övernatten.

2. Skär rödbetor och gurka i små tärningar. Skala och finhacka rödlöken

3. Blanda alla ingredienser med gräddfil (spara ev lite till garnering). Vänd ner sillen eller servera röran på sillen. Täck med plastfolie och låt stå i kylskåpet över natten.

Garnera gärna uppläggningen med finhackad rödbeta, smörgåsgurka och rödlök.

Glasmästarsill

3 salta sillar med ben

1 skivad rödlök

1 morot

1 liten bit pepparrot

3 tsk kryddpeppar

2 lagerbärsblad

1 bit hel ingefära

Lag:

1 dl ättikssprit

2 dl vatten

1 dl socker

Rensa sillen men låt skinn och ben vara kvar. Skölj den väl.

Skär sillen i 2 cm tjocka bitar. Lägg den i kallt vatten i 10-12 timmar.

Blanda lagen tills sockret smällt och lägg i grönsaker, kryddor och slå den över sillen. Låt stå i 2 dygn. Koka därefter en likadan lag men tillsätt 1 tsk muskotblomma. Låt lagen kallna.

Slå bort den gamla lagen och varva ner sillen med färska grönsaker och kryddor. Häll på den kalla lagen. Efter 1 dygn är sillen klar att serveras.

Koka upp lagens samtliga ingredienser, låt kallna och slå den över den vattlagds avtorkade sillen. Låt stå kallt i 2 dygn. Lägg upp den skivade sillen på några istärningar. Slå över litet av lagen. Garnera.

Dressing:

1/2 tsk fransk senap

1 tsk vinäger

2 msk olja

Hårdkoka äggen. Skalla och mosa med en gaffel.. Blanda med den finhackade dillen.. Rör ihop dressingen. Häll av spadet från ansjovisen och häll dressingen över filéerna.. Låt dra i 10 minuter.

Lägg filéerna på äggblandningen.

Lagen:

Saft av 4-5 pressade citroner (ca 3 dl)

3 dl vatten

3 dl socker

2 lagerblad

2 tsk vitpepparkorn

2 tsk krydpepparkorn

Koka upp alla ingredienserna till lagen. Låt den kallna.. Skölj sillfiléerna i kallt vatten och skär dem i bitar. Varvar sillen med tunt skivad lök  och purjolök samt grovhackad dill. Sila lagen innan den hälls på sillen. Lägg strimalt citronskal överst.

Låt stå ett dygn i kylen innan den serveras.

1 paket (420 g) Abba sill man lägger in själv - på 5 minuter

2 dl crème fraiche

1 vitlöksklyfta

1 tsk sambal oelek

2 msk chilisås

Låt sillen rinna av och skär den i bitar. Blanda crème fraiche med pressad vitlök, sambal oelek och chilisås. Gott på sillbordet, i en baguette med grönsaker eller i en bakad potatis. Ännu enklare! Blanda sillen med 2 dl smaksatt crème fraiche paprika/chili

1 liten röd lök

1 dl finklippt persilja

Skär sillen i bitar och lägg upp på ett fat med kanter. Droppa lite av ättikslagen över sillen. Blanda grädde och majonnäs och smaka av med curry. Häll såsen över sillen strax före serveringen. Dekorera med ränder av ägg, lök och persilja.

Skölj sillfiléerna och skär dem mitt itu på längden.

Fräs löken mjuk i matfett

Varva sill och lök i rader på smort ugnssäkert fat.

Klicka matfett och sikta ströbröd över.

Grädda sillen i 225 grader ca 20 min.

Skärgårdssill med stenbitsrom och dill

Snabbaste sillen som även blir väldigt, väldigt god görs på 5-minuterssill, majonnäs, gräddfil, dill, gräslök och röd stenbitsrom. Gott på en bit surdegsknäcke.

Ingredienser

2 förp 5-minuters inläggningssill (à 420 g)

2 dl majonnäs     

3 dl gräddfil     

1 dl finskuren gräslök    

1 dl finskuren dill     

2 burkar röd stenbitsrom (à 80 g)

1 msk färskpressad citronjuice     

1 krm salt     

1 krm peppar     

Gör så här

  1. Blanda alla ingredienser utom sillen i en bunke. Krydda med salt och peppar.
  2. Häll av, skölj och skär sillen i sneda bitar. Blanda med röran.
  3. Lägg sillröran i en väl rengjord glasburk och sätt på ett lock. Låt stå i kylen 1–2 dygn före servering.

Ingefärs- och citrussill

Ingredienser

2 burkar inläggningssill (à 420 g)

1 dl ättiksprit (12 %)

2 dl socker

3 dl vatten

10 svartpepparkorn

 

1 liten rödlök

 

ca 5 cm färsk ingefära

 

10 cm purjolök

 

finrivet skal av 1 1/2 citron

Gör så här

  1. Koka upp ättika, socker och vatten med pepparkorn. Låt sjuda ca 5 minuter. Ta från värmen och låt lagen kallna.
  2. Skala rödlök och ingefära. Ansa purjolöken. Skär ingefära, rödlök och purjolök i tunna skivor.
  3. Häll av, skölj och skär sillen i sneda bitar. Varva sill med ingefära, lök och finrivet citronskal i en väl rengjord burk. Häll på lagen och sätt på lock. Låt stå i kylen 1–2 dygn före servering.
