Apelsinlikör

 

1 kg strösocker 3/4 l vatten 6 apelsiner 70 cl brännvin

Smält sockret tillsammans med vattnet i en kastrull. Riv apelsinskalen och pressa apelsinerna. Rör ned både skal och saft samt brännvin i sockerlagen. Häll likören på flaskor. Sätt på kork och ställ flaskorna på en varm plats. Skaka flaskorna dagligen. Filtrera likören efter tre veckors lagring.

Låt likören lagra ytterligare tre veckor.

Apelsinlikör 2

 

5-6 stora fina apelsiner (ca 1 kg)

1 vaniljstång

5 dl florsocker

1/2 liter okryddat brännvin

30 kaffebönor

Borsta apelsinerna väl, torka dem och skala av det gula tunt med potatisskalare. Lägg skalen i en burk.

Skär upp vaniljstången på längden och lägg den i burken

Blanda florsocker och brännvin. Rör om tills sockret löst sig och häll bandningen över apelsinskalen.

Sätt till kaffebönorna och tillslut burken

Låt stå i 3 veckor.

Sila likören och fyll den på flaska

Hemgjord Apelsinlikör

Det är lätt att göra apelsinlikör själv och det finns så mycket den kan användas till (om man nu inte vill använda likören som dryck). "Parfymera" bakverk och desserter eller blanda bål och drinkar till exempel.

INGREDIENSER:


6 apelsiner
½ liter vodka eller konjak
500 g strösocker
½ vaniljstång, uppsprättad

GÖR SÅ HÄR:
1. Tvätta apelsinerna noga, skölj och torka av dem
2. Skala av det gula på skalen och klipp det i små strimlor
3. Lägg skalstrimlorna i en flaska eller burk, varvvis med socker och vanilj
4. Häll över sprit och korka igen
5. Låt allt stå i minst 4 veckor och skaka då och då
6. Sila sedan likören, häll på flaskor och korka igen

1 apelsin
44 kaffebönor
44 sockerbitar
2 vaniljstänger
75 cl brännvin

Tvätta apelsinen noga och stick 44 hål i den med en grov sticka. Lägg apelsinen i en burk tillsammans med kaffebönor, socker och snittade vaniljstänger. Slå på spriten och förslut burken väl. Rör om några gånger första dagen så att sockret löser sig. Låt den sedan stå i 44 dagar, sila likören och njut.

3 msk O´Boy eller efter smak – eller kakao
75 gr vaniljsocker
1/2 flaska whisky-essens
1 kvarting renat

Koka upp grädden och låt den kallna. Vispa äggulor och florsocker sakta. Tillsätt O´Boy och vaniljsocker. Tillsätt sprit, grädde och essens och vispa sakta. Drick och njut!

Blåbärslikör eller gott dessertvin 

Blåbär växer i nästan hela Sverige och behöver ingen beskrivning. Det är faktiskt en gammal medicinalväxt där man utnyttjade bärens garvsyra som förstoppningsmedel.

Här får vi en syrlig och söt likör.  Ut och plocka bär i skogen.  

Gör så här: 

Häll över hälften av en helbutelj Brännvin special i ett kärl och lägg i blåbär så att de blir täckta av spriten. Täck över med plastfolie och låt stå några veckor.  

Sila och slå essensen tillbaka i flaskan. Låt stå och mogna ganska länge.

Tappa över till ny flaska med en hävert för att få bort bottensatsen.   

Drick rumstempererat.

Ingredienser

3 dl blåbär

75 cl vodka

2,5 dl socker

Tillagning

Lägg blåbär i en flaska eller i en glasburk. Häll på spriten och låt stå 1–2 veckor. Sila bort blåbären och rör ut sockret i spriten. Häll upp i en flaska

Björnbärslikör   

Här ska vi göra en syrlig och söt essens lämpligt som likör. Plocka bären som mognar på buskar i juli-augusti. 

Gör så här: 

Häll över hälften av en helbutelj Brännvin Special i ett kärl. Tillsätt björnbär (mosa inte bären) så att de lagom täcks av spriten. Täck med plastfilm och låt stå några veckor. 

Sila genom en finmaskig sil eller väv. Slå tillbaka essensen i flaskan och låt stå några veckor att mogna.

Tappa över till ny flaska med en hävert för att få bort bottensatsen.   

Avnjut denna färgrika likör rumstempererat.

1 1/2 liter björnbär

1 liter vodka

1 1/2 dl mörk rom

Dl socker

Rensa bären och varva dem med sockret i en glasburk. Häll på brännvin och rom.

Låt stå i minst 1 månad innan likören silas

3 dl (250 gr) socker

1 1/4 dl vatten

3 citroner

1/2 kanelstång

1 tsk koriander

1 l konjak

Koka socker och vatten. Skölj citronerna och skär dem i 8 delar. Ta ut kärnorna och skär citronbitarna i tunna skivor. Fördela dem i 2 flaskor. Lägg kanelstång och koriander i varje flaska. Häll på sockerlag och konjak. Låt stå i ca 1 månad. Sila upp likören och låt stå i ytterligare 14 dagar.

5 hackade enbär

1 pomeransskal

1 tsk kummin

75 cl Brännvin special (34%)

1 1/2 dl socker eller råsocker (1,5 dl socker motsvarar 1 dl flytande honung)

Gör så här

  1. Lägg smaksättarna i en flaska och häll på Brännvin Special. Fyll på med socker beroende på smak och spritmängd. Det går också att använda råsocker eller flytande honung om man vill ha likören mer simmig.
  2. Låt flaskan stå i rumstemperatur under 10-14 dagar, men helst ännu längre. Skaka flaskan varje dag. Smaka av och filtrera eller sila bort örterna. Sötman och styrkan går att justera efter hand.

1/2 vaniljstång.

Varva hallon och socker i en burk och häll på spriten. Tillsätt den uppskurna vaniljen. Skaka om burken då och då de första dagarna tills sockret lösts upp.

Låt stå i 5-6 veckor och sila

3,5 dl socker

3–4 dl vodka

1. Skölj jordgubbarna och skär dem i centimeterstora bitar.

2. Varva bär och socker i en glasburk. Häll på spriten och skaka lätt.

3. Låt stå på ljus plats 4–5 veckor. Skaka burken då och då så att sockret löser sig.

4. Sila av spriten och filtrera.

Enkel likör som påminner om Kaloua. 

Ingredienser

9 dl vatten
7 dl socker
5 msk Nescafé
3 msk vaniljsocker
75 cl renat

Gör så här

Koka upp 9 dl vatten, 7 dl socker, 5 msk Nescafé.
Låt småsjuda under omrörning i 1 timme.
Blanda i 3 msk vaniljsocker, låt kallna.
Slå i 75 cl renat och rör om häll, samt häll upp på flaskor.

1 1/2 liter syrliga körsbär

1 flaska enkel konjak

1 1/2 dl vatten

5 dl strösocker

1/2 uppskuren vaniljstång

3-4 hela kryddnejlikor

Kärna ur ca 1/3 av bären och krossa kärnorna. Lägg i kärnorna i en burk med fruktköttet och resten av bären. Hällpå konjaken och låt dra i 3-4 veckor.Blanda vatten socker vaniljstång och nejlikor i en kastrull och koka upp tills sockret har smält. Låt kallna. Sila av körsbär och kärnor och blanda med sockerlagen. Lagra i några månader

1 flaska brännvin

3 dl körsbär

1 st vaniljstång

2 dl socker

1. Skölj och kärna ur körsbären. Lägg dem i en flaska och häll på spriten. Dela vaniljstången på längden och lägg neri  flaskan.
2. Låt flaskan stå och dra i kylskåpet en vecka.
3. Sila av bären och tillsätt sockret. Skaka flaskan tills sockret löst sig.

  1. 1. Tvätta och skrubba citronerna. Koka ihop socker och vatten till en sockerlag, medan lagen svalnar skala det yttersta gula skalet från citronerna, pressa ur saften och blanda alltihop.
  2. 2. Slå upp på flaskor och fyll upp med vodka, sätt på lock och vänd flaskorna så att det blandas. Låt stå några dagar innan du silar bort skalen.

75 cl Brännvin special (34%)

1 1/2 dl socker eller råsocker (1,5 dl socker motsvarar 1 dl flytande honung)

hyvlat skal av 1/4 apelsin

1 msk korianderfrö

1 msk torkad basilika eller färsk

Gör så här

Persikolikör

Ca 1 kg mogna persikor

7 1/2 dl brun farin

1 hel kanelstång

1/2 uppskuren vaniljstång

1/2 flaska  vodka

1/2 flaska mörk rom

Tvätta persikorna, torka av dem och skär fruktköttet i bitar. Varva det i en burk med farinsocker, den avbrutna kanelstången och den uppskurna vaniljstången.

Häll på rom och vodka, sätt på locka och skaka om burken. Ställ den på ett skuggigt ställe.

I början skas burken ett par gånger per dag tills farinsockret lösts upp.

Efter ca en månad silas frukt och kryddor bort och likören hälls på flaskor. Låt den stå en dag  så att bottensatsen kommer fram. Häll därefter över på nya falskor utan bottensats.

Rabarberlikör

 

5 dl späd, finskuren rabarber

4 dl brännvin

1 bit vaniljstång

1,5–2 dl vit sirap

1. Lägg rabarbern i en glasburk. Häll på spriten och skaka några minuter.

2. Låt stå 3–4 veckor, tillsätt vaniljstången efter drygt halva tiden. Skaka om då och då.

3. Sila av spriten, filtrera och tillsätt 1,5 dl sirap. Blanda väl.

4. Provsmaka efter några dagar och tillsätt eventuellt mer sirap.

Rabarberlikör med kardemumma

Ingredienser:

4 dl späd rabarber i skivor
3-4 dl strösocker
8 kardemummakärnor
5 dl vodka

Gör så här

Varva rabarber och strösocker i en glasburk med lock.
Häll över vodkan och tillsätt kardemummakärnorna. Skaka om.
Låt stå i 4 veckor och fortsätt att skaka om den då och då.
Spriten silas av och likören filtreras bäst genom ett kaffefilter.
Provsmaka och tillsätt eventuellt mer socker.
Bör lagras i några veckor, mörkt och svalt.

1 liter rensade frostnupna rönnbär

1 liter vodka

3-4 kryddnejlikor

4 dl strösocker

Lägg bären i en burk och häll på spriten. Låt stå och dra i 3-4 veckor innan bären silas från.

Kocka en sockerlag av vatten socker och nejlikor. Blanda rönnbärssnaps och sockerlag och låt stå och mogna i 1-2 månader.

Slånbärslikör


1 liter frostbitna slånbär (släng dem i frysen över natten om frosten inte kommit till dig än)
1 liter okryddat brännvin

Rensa och skölj bären (du behöver inte ta bort kärnorna).  Lägg bären i en stor burk eller flaska och häll på spriten. Tillslut burken och låt den stå i ca 3 veckor. Skaka då och då. Bli inte rädd av att det ser slemmigt och äckligt ut!
Sila bort bären efter tre veckor.

Sockerlag efter 3 veckor (per liter avsilad bärsprit):
1-2 dl vatten
5-6 hg strösocker

Koka sockerlag och låt den svalna. Blanda med bärspriten och häll upp på flaskor.

Svartvinbärslikör

 

1/2 liter repade svarta vinbär

1 kanelstång

8-10 svartavinbärsblad

1 flaska vodka

3 dl socker

 

Varva bär med blad och kanelstången sönderbruten i bitar i en stor glasburk med lock

 Låt stå på ett skuggigt ställe i 2-3 veckor. Skaka burken då och då så att bären går sönder.

Sila sedan ifrån bären och pressa dem med baksidan av en sked när de ligger i silen, så att en del av saften följer med.

Blanda detta svartvinbärsbrännvin i en burk med sockret, skaka om och ställ på en skuggig plats. Skaka då och då tills sockret lösts upp. Låt stå och mogna i smak ett par månader.

Svartvinbärslikör av blad

 

Fyll en glasburk till hälften med tätt packade svartvinbärsblad och häll på en flaska vodka. Låt stå och dra 1 vecka.

Sila av spriten, blanda med 3-5 dl strösocker och skaka om.

Låt stå och någon månad innan likören fylls på flaskor

Frysta tranbär

50 cl vodka

 

Sockerlag:

 

2dl strösocker

2 msk vatten

 

 

Gör så här:

 

Fyll en flaska med tranbär och häll på vodkan. Låt stå en månad.

Blanda därefter med sockerlagen. Låt stå minst ytterligare 1 månad

Åkerbärslikör

åkerbär
okryddad sprit
3-5 dl strösocker per liter avrunnen sprit


Lägg de färska orensade bären i en burk.
Häll över spriten så det täcker bären.
Låt stå i 3 dygn i rumstemperatur.
Sila ifrån bären, kläm lite försiktigt så att så mycket som möjligt av bärsaften kommer med.
Mät upp vätskan och tillsätt socker efter behag.
Skaka om så att sockret löser sig.
Lagra likören. Den behöver några månader för att komma till sin rätt.
