SNAPSAR

 

Akvavit från Klädesholmen

Ingredienser:

1 flaska brännvin

Färsk pepparrot 4-5 cm lång

1 msk torkade fänkålsfrön

1 knippe färsk dill

2 tsk flytande honung

Gör så här

1 Häll över spriten i en enliters flaska eller annat kärl med tättslutande lock.

2 Skala pepparroten och skär i smala strimlor, tillsätt fänkål, dill och honung. Förslut flaskan och vänd den upp och ner ett par gånger.

3 Placera flaskan mörkt och rumstempererat över natten.

4 Sila av alla kryddor genom ett melittafilter eller en finmaskig sil och låt stå ytterligare ett dygn, nu i kylen. Därefter är akvaviten färdig att avnjutas.

Aniskryddat brännvin 

Anis finns i ca 90 arter och ett par av dem växer vilt i Norden. Extrakt från roten lär användas som medicin mot heshet och halssjukdomar. Andra kända användningsområden för anis är Kungen av Danmark (bröstkarameller) och i alkoholhaltiga drycker som Anisette och Absint.  

Den kan krydda brännvin både tillsammans med andra kryddor eller för sig själv.  Här är ett recept med enbart anis. 

 Gör så här: 

Häll av ca 5 cl Brännvin Special (helbutelj) i en kopp. Lägg i två kaffeskedar anisfrön. Täck med plastfilm och låt stå något dygn i rumsvärme.  

Filtrera genom kaffefilter och häll tillbaka i flaskan. Låt stå några veckor att mogna. 

Smakar bäst rumstempererat.

Backnejlika i brännvin 

Backnejlika växer allmänt på torr och sandig mark i södra och mellersta Sverige och kan även påträffas lite längre norrut.

Plocka den rosenröda blomman i juni – augusti och använd hela blomman så att honungen i botten kommer med. 

Det blir en lagom sötma för en aperitif.  

Gör så här: 

Lägg hela blommor i en kopp och fyll med Brännvin Special så att det täcker blommorna. Täck med plastfilm och låt stå en vecka. 

Filtrera genom kaffefilter. Späd med Brännvin Special till dubbla mängden. Låt stå några veckor att mogna.  

Smakar bäst rumstempererat.

Bensons dill- och kumminsnaps

Ingredienser:

3 1/2 dl renat brännvin
1 matsked kummin
2 matskedar dillfrö
1 liten bit citronskal (stor som en femkrona)

Gör så här:
Blanda alla ingredienserna i en flaska (kom ihåg att bara ta det yttersta gula skalet på citronen, annars kan snapsen bli bitter av det vita underskalet).

Låt dra i 2 veckor, sila av kryddorna och servera.

Björkbladsnaps

1 dl späda färska björkblad
1 dl sprit, gärna Brännvin special

Lägg bladen i en vid burk, häll på spriten. Låt dra ca 7-10 dagar, sila från bladen och späd till önskad smak med mer sprit. Snapsen blir bättre av att lagras, men görs den nu i maj går den att dricka till midsommar.

Ingredienser

1 flaska neutral vodka (à 70 cl)

1 dl späda granskott

7 enbär

1 sockerbit

Gör så här

  1. Blanda vodka med granskott, enbär och sockerbit.
  2. Låt stå och mogna 1–2 veckor.

Sila av kryddorna innan snapsen ska serveras

Ingredienser:

7 1/2 dl renat brännvin
3 st stjärnaniskottar
5 st små kryddnejlikor
5 st pomeransskal
5 cl whisky
6 cl musöron från björk (alternativt färsk mejram)
1 msk honung

Tillagningstid:
2- 3 veckor

Gör så här:
Låt dra i två, tre veckor.Sila av kryddorna och smaka av. Drick och njut.Musöra som ingår i änglasnapsen är som små björkbladsskott som ligger i brännvin och blir till en egen essans som stärker upp snapsen.Musöronen plockas i april precis när björkbladen slår ut.

Bered som snapsen ovan.
En lite kraftigare snaps som passar bra med sill.

Charles kryddörtsblandning 

Vem Charles är vet jag inte men receptet är lånat från Matmammans Blogg. Det blir en mjuk och god snaps till sill och annat.  

Gör så här: 

2 kvistar av oregano eller timjan

½ dl repade blad av citronmeliss

1 myntakvist

strimlat skal av ½ citron eller lime.  

Lägg allt i en glasburk. Slå över en helflaska Brännvin Special. Sätt på locket eller täck över med plastfilm och låt stå och dra 2-3 dygn. 

Sila genom kaffefilter och häll upp på butelj. Ett par veckor för mognad gör drycken gott.

Chilisnaps

Tvätta en hel chili. Lägg den i en halvflaska (350 ml) valfritt okryddat brännvin. Låt stå i rumstemperatur i 3-4 dagar. Står det längre börjar brännvinet bli outhärdligt starkt.

Snabb het chilisnaps

Ta ett par strimlor färskt citronskal. Försök få bort det vita under skalet, som är beskt.
Ta en liten bit, ca 2 cm, chilipeppar. Låt dra i 2-3 dl sprit under en eller ett par nätter. Smaka av med två sockerbitar. Därefter klar att smaka, som snaps eller aperetif med is i.
Du kan göra på två sätt:
1. Fyll på cirka 1,5 dl sprit i flaskan, låt det dra tills det är stark smak, 1-2 veckor. (Torkade bär bö dra ett par månader).
Därefter silar du bort kryddorna. Du har nu en essens som smaksätts med ren sprit till önskad smak.
Esensen kan du lagra i flera år, den blir bara bättre och bättre.

2. Fyll hela flaskan med ren sprit och låt det dra ett par dagar till det hela uppnått bra smak. Sila bort kryddorna och lagra spriten minst ett par månader.

Chili- och ingefärskryddad sommarsnaps 

Ska det serveras rökt lax till midsommar? Ja då passar den här snapsen bra. Lagom att krydda en vecka innan.  

Gör så här: 

Lägg i 1 chili som delats på längden i en bunke tillsammans med 2 msk färsk strimlad ingefära, ½ citron i klyftor, ½ dl råsocker och slå över ca 20 cl Brännvin Special (från helbutelj). Rör om väl, täck med plastfilm och låt stå 3-4 dygn i rumsvärme.  

Filtrera genom kaffefilter och späd blandningen med det resterande brännvinet till önskad smak. 

Smakar bäst rumstempererat

Har du torkade bär går det bara med första metoden.

Citron & Myntasnaps

Ingredienser

3 1/2 dl okryddat brännvin
2 små kvistar mynta
1/2 citron det gula skalet i strimlor
1 vaniljstång, delad
ev 1 tsk socker

 

Gör så här:
Lägg i myntan, citronskalet och vaniljstången. Låt snapsen stå kallt i tre dagar. Om snapsen ska sparas längre sila av kryddorna. Servera snapsen väl kyld! Det tycker jag är godast!

Citron- & rosmarinsnaps

Valfri okryddad vodka
skalet från 1 citron, endast det gula
några kvistar rosmarin

Gör så här:
Stoppa ned några bitar av det gula ­citronskalet och rosmarinkvistarna i vodkan.
Förslut flaskan eller glasburken.
Låt den stå och dra i rumstemperatur i några timmar, smaka av.
När du är nöjd med smaken plockar du bort smakgivarna och kyler där­efter vodkan.
Dekorera vodkan med citronskal och rosmarin innan serveringen.

Citron & Svartpeppar

1 citron, det tunna gula skalet
2 kvistar färsk rosmarin
6 lätt krossade svartpepparkorn
70 cl brännvin special
2 dl söt sherry
Tvätta och borsta citronen väl och skala av det yttersta tunna gula skalet med en potatisskalare.
Lägg citronskal, rosmarin och peppar i en glasburk med lock.
Fyll på med brännvin och sherry. Sätt på locket och låt burken stå i rumstemperatur 24 timmar.
Sila upp snapsen på flaska och den är färdig att avnjutas. Snapsen vinner inte på ytterligare lagring.

Citronbrännvin, Cajsa Wargs

1 dl citronsaft samt skalet av en stor citron

1,5 dl strösocker

70 cl Cognac billig

1 hel kanelstång

1 tsk kardemummakärnor

Kanel, kardemumma och citron ger snapsen en god kryddning.

Gör så här

1. Tvätta citronen i varmt vatten. Torka den väl. Skalad det gula av skalet med en potatisskalare. Hacka det fint. Pressa saften ur citronen.
2. Häll strösockret i t ex en glasburk med lock. Tillsätt citronsaft, skal och konjak. Bryt kanelstången i mindre bitar. Tillsätt kanelstång och kardemummakärnor.
3. Sätt på locket. Förvara burken i rumstemperatur 2 veckor.  Skaka den dagligen.
4. Filtrera genom tunn silduk eller kökshandduk. Häll brännvinet på flaska eller i karaff. Lagring ytterligare en vecka rundar av smaken.

Gör så här: 

Skala den omsorgsfullt tvättade citronen med en potatisskalare utan att ta med det vita. Strimla dem och lägg dem i en stor glasburk tillsammans med pomeransskalen. Slå spriten över och låt stå och dra i 3 dagar.

Tillsätt sockerbitarna och låt stå ytterligare ett par dagar. 

Sila bort skalen och häll upp på flaska och låt gärna stå ytterligare någon eller några veckor innan det är klart att smakas av.

VANILJ- OCH CITRONSNAPS

Tvätta 1 citron i ljummet vatten. Skär en 15 cm lång tunn skalstrimla (skär bort det vita som ger besk smak). Lägg ned skalet i en flaska tillsammans med en hel vaniljstång och fyll på med 1 tsk pressad citron. Stoppa ned 2 st sockerbitar och fyll upp med Brännvin Special. Vänd flaskan fram och tillbaka tills sockret lösts. Låt stå i rumstemperatur i 2 dygn. Plocka upp kryddorna ur flaskan och lägg på kylning. Ett fiffigt tips är att knyta en sytråd i både citronremsan och vaniljstången - då är de enkla att fiska upp. Mjuk och mild snaps som passar fint till midsommarsillen.

Ingredienser:

70 cl brännvin

3 vaniljstänger delade på mitten

2 – 3 msk honung

Häll brännvinet i en glasburk. Lägg i honung och vaniljstänger. Låt stå tills du får önskad vaniljsmak. Ta bort vaniljstängerna och servera kyld.

1 krm anis

2 gr torkat pomeransskal (1 bit)

Gör så här

1. Ta undan cirka 1 dl sprit.

2. Tillsätt anis och fänkål i resten av spriten.

3. Bryt sönder pomeransskalet i småbitar och lägg i dem. Låt stå i två dygn. Skaka om ordentligt då och då.

Om du vill spara snapsen är det bättre att sila av och ta bort fikon och vaniljstång. Vid servering kan några nya fikonklyftor läggas i flaskan, det ser både gott och spännande ut. Servera snapsen välkyld.

Gör så här

1. Häll upp brännvinet i en flaska med bred hals eller i en kanna, lägg i klyftor av tre fikon samt vaniljstången. Låt stå och dra i kylen 3 dygn, sila av i en ren silduk.

Blommorna skördas när de nyss slagit ut. Man måste rensa noga, bara blommorna torkas lätt i skuggan en dag, varefter man lägger dem i ett kärl och häller brännvin över. Efter en vecka frånsilas essensen, som filtreras och blandas med brännvin. Om man använder bären skall dessa skördas när de är väl mogna. Skölj och rensa noga. Lägg bären i ett kärl och slå brännvin över. Efter en vecka frånsilas essensen. Låt essensen stå ett halvår, så att bottensatsen kan frånskiljas. Blanda ut med brännvin efter smak.

Kryddorna kan krossas lätt i en mortel. Fuska inte med mald kardemumma eller muskot, det skall vara riktiga grejor! Det är dessutom skillnad på kardemummakärnor och hela kardemummor. Låt det hela dra i minst en vecka.

Gammal Norrlands

Först gör man grund essenserna, på Anis och Kummin.

Det här är grund blandningen.

1. Tag en dl anis och slå på dubbelt så mycket 40-45% sprit häll det i en flaska eller burk. På med locket och låt det stå och dra i minst en vecka.

2. Sila sedan bort fröna och låt blandingen stå (länge) så att den blir helt klar.

3. Dekandera sedan den klara vätskan (utan bottensats) till en ren flaska eller burk.

4. Gör exakt likadant som punkt 1-3 med Kummin.

5. När ovan är klar så börjar själva Blandningen som skall ge oss Gammel Norrlands smak.

6. Till en halvliter tar man ca 0.5cl av Kummin essensen och ca 1,5cl av anis essensen tag sedan en skvätt sherry (mindre än 0,5cl), tex Bristol Cream, fyll sedan på med ren 40-45% sprit upp till 500ml.

Lägg de krossade kryddorna i en glasburk.
Häll på 1,5 dl av spriten.
Sätt på locket och låt dra i 5 dygn.
Skaka om burken några gånger per dag.
Sila extraktet genom ett kaffefilter ner i en ren flaska.
Rör ut honungen i lite av spriten och häll i flaskan.
Häll på det mesta av spriten - smaka dig fram.
För mycket kryddsmak - häll på resten av spriten.
Smaka om.
Serveras väl kyld!
Passar mycket bra till kräftor och julsillen.

Ingredienser:

35 cl vodka

1 dl lingon

1 st grankvist

½ dl russin

Att smaksätta sin egen snaps är roligt, dessutom blir den vacker som en juldekoration. Det ska helst vara nya granskott, men en kvist av julgranen går bra. Men det ska inte vara ädelgran eftersom den inte doftar lika mycket som vanlig gran.

Gör så här

1. Blanda samman vodka, lingon, grankvist och russin. Låt det stå och dra 3–4 dagar i kylskåpet.
2. Sila bort russin och hälften av lingonen. Låt grankvisten ligga kvar i flaskan när den serveras. Om färgen blivit blek, byt ut den.

Ingredienser:

 

Skalet av en citron

2 kvistar färsk rosmarin

6 lätt krossade svartpepparkorn

70 cl brännvin

2 dl söt sherry

Ingredienser

5 dl vodka
1 dl torkade nypon
1 msk korianderfrön
1 tsk fänkålsfrön
1 cm skivad ingefära
1 Stjärnanis

Gör så här
Blanda vodka, torkade nypon, korianderfrön, fänkålsfrön, skivad ingefära och stjärnanis i en flaska. Låt stå i minst 3 dygn, med fördel längre. Provsmaka. Om kraftigare smak önskas, låt snapsen stå ett par dagar till. Sila sedan snapsen. Låt gärna den färdiga snapsen mogna några veckor så smakar den bara bättre och bättre

Gör så här:  

Blanda allt i en flaska och låt stå i minst 3 dagar. Provsmaka, om starkare smak önskas kan snapsen stå ett par dagar till. 

Sila snapsen i kaffefilter. Låt därefter snapsen mogna några veckor så smakar den bättre.

Ingefärssnaps

Ingredienser

15 gr torkad ingefära

1 dl brännvin

Spädning 6 dl brännvin

 

Snapsen görs på torkad ingefära och får en frisk smak med ganska mycket hetta. Servera till kött eller som en aperitif med is och en skiva citron.

Dela ingefäran i mindre bitar och lägg i en glasburk. Häll på spriten och låt stå ca 10 dygn. Filtrera och lagra ytterligare. Späd med brännvin

Plocka blomknopparna innan de slår ut. Lägg dem i en flaska och slå över brännvinet. Efter 3-4 dagar har man fått en mahognybrun essens.

Ingredienser

350 cl brännvin

2 krm hel koriander

1 krm hel kummin

1 krm hel fänkål

2 msk cognac

1 tsk söt sherry

Gör så här

1. Ta undan 1 dryg dl sprit.

2. Tillsätt koriander, kummin och fänkål i resten av spriten.

3. Låt stå i ett dygn. Skaka om ordentligt då och då.

4. Filtrera genom kaffefilter. Häll tillbaka drycken i flaskan.

5. Tillsätt cognac och sherry och fyll upp med den sparade spriten.

Kräftsnaps

Ingredienser:

35 cl vodka

1 lakritsrot

1 kvist rosmarin

2 tsk socker

Lägg lakritsrot, rosmarin och socker i glasburk. Häll över vodkan. Skaka och låt stå i 3 dygn. Sila och servera kyld

 

Kräftsnaps 2

Ingredienser:

70 cl brännvin

2 dillkronor

1 knippe utslagna röllekeblommor

1 msk korianderfrön

 Dillkronornas smak passar utmärkt till kräftorna. Röllekan har en bitter ton och av koriandern får man en uns lakritssmak.
Sedan essenserna blandats med brännvinet bör snapsen mogna 1-2 veckor, gärna längre innan den dricks sval men inte kall.

Gör så här:

1. Ta 1 1/2 dl brännvin från flaskan. Lägg några dillkronor i en liten burk och häll i 1/2 dl brännvin. Tryck ner dillen så att den täcks av sprit. Gör det samma med röllekeblommor och koriander.
Lägg i burkar med 1/2 dl brännvin.
2. Sätt på lock och låt dem stå i rumstemperatur 1-2 veckor beroende på hur stark essens som önskas.
3. Filtrera essenserna genom kaffefilter. Blanda 1 msk korianderessens, 2 msk dillessens och 1/2 msk röllekeessens med 5 dl brännvin. Häll tillbaka i brännvinsflaskan. Låt stå och mogna någon vecka. Servera snapsen rumstempererad eller sval, inte kall för då går inte smakerna fram.

Krösabrännvin 

Ingredienser:

3 dl lingon
½ dl blåbär
2 msk socker , ca
35 cl okryddat brännvin

Gör så här

Rensa lingon och blåbär om du använder färska (fungerar också med frysta).
Lägg i en flaska eller glasburk. Strö över socker och häll i okryddat brännvin. Sätt på kork eller lock.
Ställ brännvinet svalt och mörkt i en månad. Vänd försiktigt någon gång under tiden.
Sila av brännvinet och servera.

1 pepparrot ca 2 cm

1 tsk hela fänkålsfrön

2 krm hela kumminfrön

½ msk flytande honung

Gör så här

1. Fyll vodkan i en fin flaska.

Lägg lingon i en glasburk och fyll på med brännvin så att det täcker bären.
Sätt på locket och låt stå i någon månad.

Midsommarblandning 

 

Svensk snaps när den är som bäst – midsommar. Den går ju bra att smaka på under resten av året också.  Faktum är att den lika gärna slinker ner till julsillen.

Gör så här: 

Stöt ½ dl hela korianderfrön lätt i en mortel och lägg i en glasburk tillsammans med en sockerbit. Slå över 30 cl renat, vodka eller Brännvin Special från en helflaska, 70 cl. Sätt på locket och låt dra minst ett dygn, gärna längre. Vänd och rotera burken ett par gånger dagligen. 

Sila genom kaffefilter ner i en ren flaska.  

Bryt 5-6 dillkvistar och lägg dem i en bunke. Slå på resterande sprit, 40 cl, täck över och låt dra i 12 timmar.

Sila genom kaffefilter. 

Blanda samman de båda extrakten och servera kylskåpskallt

En fräsch och frisk snaps som du gör över natten.
1 flaska Renat, 75 cl
1 citron
1 rejäl myntakvist eller citronverbena

Häll upp spriten i en karaff. Tvätta citronen och skala tunt med potatisskalare. Lägg ner i karaffen. Skölj myntakvisten eller citronverbenan och lägg i.
Sätt på kork och låt stå över natten. Servera gärna lite sval till sill.

6 jordgubbar
1 flaska Renat, 75 cl
1 kvist färsk rosmarin
1 citron

Skölj och dela jordgubbarna i kvartar. Pilla ner dem i flaskan. Peta även ner den sköljda rosmarinkvisten. Tvätta citronen och skala tunt med potatisskalare. Peta ner skalet tillsammans med det andra, du kan behöva hälla av lite sprit.
Sätt på korken och ställ ljust i minst fyra timmar, men gärna över natten. Servera i iskalla glas.
Blir det något över kan du sila och hälla upp snapsen på en annan flaska dagen efter.

Gör så här:

Skölj myntakvistarna och stoppa dem i en flaska. Tvätta limen i varmt vatten. Skala enbart av det gröna skalet.

Grundrecept för snaps och likör
Du kan göra på två sätt:
1. Fyll på cirka 1,5 dl sprit i flaskan, låt det dra tills det är stark smak, 1-2 veckor. (Torkade bär bö dra ett par månader).
Därefter silar du bort kryddorna. Du har nu en essens som smaksätts med ren sprit till önskad smak.
Esensen kan du lagra i flera år, den blir bara bättre och bättre.
2. Fyll hela flaskan med ren sprit och låt det dra ett par dagar till det hela uppnått bra smak. Sila bort kryddorna och lagra spriten minst ett par månader.
Har du torkade bär går det bara med första metoden.

Pomeransgin 

I vissa drinkrecept ingår det Orange Gin eller pomeransgin. Kanske går det att beställa en flaska på Systembolaget, men här är en enklare väg att göra det själv. Vinner på att lagras i tre år så passa på och sätt en flaska eller två varje år. Efter tre år så blir det kontinuitet. 

Pomerans, eller Seville orange som engelsmännen kallar frukten är en bittersmakande citrusfrukt som ser ut som en apelsin och som används som smaksättare i marmelader, geléer, drinkar och likörer samt i jultider till bröd och i glögg. Färsk pomerans finns i välsorterade fruktdiskar under januari till mars.

4 pomeransfrukter, skalen av

225 g strösocker

2 kryddnejlikor

1 liter gin 

Gör så här: 

Häll över 25 cl gin i ett annat kärl. 

Skala mycket försiktigt pomeranserna och lägg skalbitarna i ginflaskan. Tillsätt kryddnejlikor och socker och häll tillbaka gin från det andra kärlet så att ca 2½ cm återstår till toppen. 

Låt flaskan stå framme, t.ex. på köksbänken några dagar och skaka den varje morgon och kväll så att sockret löser sig. 

Ställ flaskan på ett svalt och torrt ställe efter en vecka och låt stå i tre år.

Krossa tre enbär grovt. Blanda med
tre kryddmått kummin, ett kryddmått fänkål och lika mycket koriander. Häll allt i en helflaska vodka. Lägg slutligen i fina rosenblad och låt blandningen stå fram till påskafton.

Saffranssnaps

Ingredienser:

70 cl brännvin special, flaska

1 st citron

1 st apelsin

1 g saffran, 2 paket

Gör så här

1. Häll brännvinet i en stor flaska eller burk med lock.
2. Tvätta frukterna väl. Skala dem tunt med potatisskalare så skalet inte kommer med. Lägg skalen samt saffran i spriten och låt det stå över natten.
3. Sila spriten genom ett kaffefilter och häll den i en flaska. Låt snapsen stå kallt tills den ska serveras.

Salvia- & limesnaps

Tvätta limen under rinnande ljummet vatten. Skala med en potatisskalare en spiral av det yttersta gröna skalet. Lägg spiralen tillsammans med 4 blad färsk salvia i en halvflaska (350 ml) Brännvin Special. Låt stå till nästa dag. Ska snapsen sparas längre bör salviabladen och limeskalet tas bort efter 12-24 timmar.

Gör så här:
Lägg i myntan, citronskalet och vaniljstången. Låt snapsen stå kallt i tre dagar. Om snapsen ska sparas längre sila av kryddorna. Servera snapsen väl kyld! Det tycker jag är godast!

0,5 st vaniljstång

1 krm hel kummin

1 krm hel anis

1. Ta undan cirka 1 dl sprit.

2. Skåra vaniljstången, klipp den i bitar och tillsätt dem i resten av spriten. Tillsätt kummin och anis. Låt stå i två dygn. Skaka om ordentligt då och då.

3. Filtrera genom kaffefilter. Häll tillbaka drycken i flaskan och fyll upp med den sparade spriten.

Södergårdssnaps

Enkel snaps att göra som fungerar till det mesta. Påminner om skåneakvavit.
Dock mycket viktigt att filtrera så småbitar från anisfröet samlas upp. Annars kan anisen ta över helt och hållet, vilket smakar mindre bra.

Ingredienser

2 msk hel fänkål
1 msk hel kummin
1/2 msk hel anis
2 sockerbitar alternativt 1/2 tsk honung
70 cl vodka eller renat (38-40%).
Lägg ner fänkål, kummin och anis i en flaska med sprit och skruva på korken.
Skaka flaskan några gånger en gång i halvtimmen så kryddorna blandas.
Efter ca 2 timmar silas kryddorna bort och den kryddade spriten filtreras genom ett kaffefilter.
Efter filtreringen tillsätts två sockerbitar alternativt honungen.
Efter det sockret/honungen löst sig är drycken klar att drickas. Förvaras i kyl.

6 späda malörtsskott får dra två timmar i 70 cl vodka. Filtrera och lägg därefter i 1 dl småblommor av rölleka. Låt dra i två dagar. Filtrera och lägg i 2,5 cl gula knoppar av Johannesört. Låt dra i två veckor. Filtrera, buteljera och lagra. Den som vill ha kraftigare smak låter ingredienserna dra tre timmar, tre dagar och tre veckor.
Grundrecept för snaps och likör
Du kan göra på två sätt:
1. Fyll på cirka 1,5 dl sprit i flaskan, låt det dra tills det är stark smak, 1-2 veckor. (Torkade bär bö dra ett par månader).
Därefter silar du bort kryddorna. Du har nu en essens som smaksätts med ren sprit till önskad smak.
Essensen kan du lagra i flera år, den blir bara bättre och bättre.
2. Fyll hela flaskan med ren sprit och låt det dra ett par dagar till det hela uppnått bra smak. Sila bort kryddorna och lagra spriten minst ett par månader.
Har du torkade bär går det bara med första metoden.

Gör så här: 

Häll 10 cl Brännvin Special ur en helbutelj och använd till något annat.

Häll av ytterligare 10 cl från buteljen i ett kärl och lägg i det rivna skalet av en citron. Täck med plastfilm och låt stå några dygn. 

Filtrera genom ett kaffefilter och slå essensen tillbaka på flaskan tillsammans med 1 tsk honung eller 1 sockerbit. 

Häll 4 cl malörtsessen i flaskan samt 6 cl Whisky. 

Servera kallt och smaka smuttande.

Vendel´s Kåsebergasnaps

 Citrontimjan – Pepparrot

 

Ingredienser:

1 fl brännvin

2 kvistar citrontimjan

5 cm skalad pepparot

1 bit råsocker

1 nypa salt

 

Gör så här:

1. Skölj timjanen noga under rinnande vatten, ”skiva” ner pepparroten med en potatisskalare, skölj snabbt under vatten och låt rinna av väl.

2. Lägg allt i en bunke och häll på salt socker och 2 dl brännvin. Låt dra max 12 timmar. Sila essensen och späd med resterande brännvin eftersmak.

3. Häll upp på favoritflaskan. Passar utmärkt till Kåsebergasillen.

2 msk rökig whisky

2 tsk ljus sirap

2 krm liquid smoke

Tillagning

1. Häll vodka och whisky i en flaska. Blanda i sirap och liquid smoke och rör tills sirapen löst sig.

Ingredienser

1 st liten flaska Brännvin Special
1 msk dillfrön
1 tsk korianderfrön
En rejäl knippe koriander

Gör så här:
Slå i de torra kryddorna kvällen före i en karaff med all sprit.
Cirka åtta timmar innan snapsen ska drickas lägger man i en rejäl kvist färsk koriander (man kan sila bort fröna innan) och servera gärna iskall med kvisten i karaffen.
Här får man fram en snaps som passar alla! Kvinnor som män, och fungerar lika bra till sillen som till woken.
